Zingy Lemon, Cashew & Coconut Raw Energy Balls

These are my absolute favourite energy balls to date, the most refreshing, revitalising snack without being too sweet and sickly. Seriously, if you haven’t bought into the energy ball thing, then these are the place to start. You wont look back, and the absolute best thing is that you can eat them straight from the freezer (they stay nice and chewy without knocking your teeth out) so you can always keep a stash at the ready..

There is only goodness in this little powerhouse of a snack, high in protein, soluble & insoluble fibre, slow release energy, vitamins, enzymes and my best superfood, anti inflammatory turmeric.

Ingredients: Makes around 15-20 balls 

6 dried apricots

150g cashew nuts 

50g shredded coconut (plus a little extra for rolling the energy balls in)

1 tablespoon oats 

25g chia seeds 

1/2 teaspoon ground turmeric 

Zest & juice of 1 large lemon (or 1.5 small lemons) 

1 1/2 tablespoons raw honey (more or less to taste)

Zest the lemons and place on a plate with some extra shredded coconut. (I actually used grapefruit zest as I had already used the lemon zest up – orange zest also works well here).

In a food processor, blend the cashew nuts and apricots until well ground. Add in the rest of the ingredients and blend until a dough like mixture forms. Taste a little and if you are an adventurous type, add a little more lemon juice.

Take a teaspoon of the mixture at a time and roll it into a ball, then repeat with the rest of the mixture.

Roll the balls in a little of the coconut & zest until covered and then place in the fridge or freezer.
