sunshine dressing

This dressing is the most fabulous colour and is almost worth making purely for that. The fact that it is also zingy, tangy and delicious is an extra bonus and that it is anti viral, anti inflammatory, anti bacterial and cleansing is the (sugar free) icing on the cake so to speak!

I’ve tried this dressing with lots of different things and have found it the most delicious drizzled over salmon, dripped onto chicken thighs and slathered onto cold new potatoes. It is pretty powerful stuff so a little goes a long way but I’m sure you will love it and find lots more other things to eat it with. Do let me know if you come up with some new ideas.

It is also an absolute power house of goodness from each and every ingredient! I’ve decided to list some of the health benefits of each ingredient next to it so you can see just how fab this really is!

Ingredients (makes enough for two)

3 tblsp extra virgin olive oil  loaded with antioxidants to help control free radicals and strengthen your immune system, also rich in monounsaturated fat that can help slow down cognitive decline associated with Alzheimer disease.

1 tblsp apple cider vinegar  can kill bacteria and pathogens and also keeps blood sugar levels constant helping prevent or control type 2 diabetes. ACV may also have protective properties against cancer. 

1/2 tblsp lemon juice high in vitamin C to boost the immune system.

1 tsp raw honey unlike heat treated honey, is full of natural enzymes and is also anti bacterial and anti fungal. 

Good pinch of pink Himalayan salt contains over 84 mineral elements including calcium and magnesium. 

A few twists of black pepper greatly increases the amount of curcumin that the body can absorb from the turmeric, which is why black pepper and turmeric should always be eaten together if possible. 

1 clove garlic crushed or finely chopped modern research shows that garlic can act as an anticoagulant in the blood, so platelets are less likely to clump together and stick to arteries, reducing the risk of heart attacks.

1 heaped tsp tahini (more if you prefer a thicker sauce or dressing) rich in minerals and high in protein

1/4 tsp turmeric my all time favourite superfood, highly anti inflammatory and anti oxidant. 

1-2 inch fresh root ginger  high in anti oxidants and has a warming effect to stimulate circulation. It also has anti nausea properties. 

Mix all the ingredients except the ginger together in a jar or jug until smooth. Grate the ginger and then squeeze the juice from the gratings. You should be able to squeeze out around 1tsp of juice. Add this to the dressing and mix well to incorporate.
