Scrumptious Strawberry Soup

Strawberry soup

I first had this incredible soup in Canada when I was 18 and staying with one of my best friends, actually not that long ago (ahhem). It was summer time, really warm and we had just arrived after a long journey. Supper started with this magic soup, which must be the most refreshing and delicious thing you can ever eat!

Honestly, it is divine as a starter on a summer’s evening with a cold glass of something… or while watching Wimbledon highlights (my plan this evening).

Strawberries are a great source of vitamin C to help your skin glow and they are also full of flavanoids and phytonutrients, which make them this beautiful bright red. Flavanoids are plant metabolites and have anti inflammatory and antioxidant properties so get making this soup!

Ingredients: serves 3

500g ripe strawberries 

6 tsp lemon juice 

1 tsp balsamic vinegar 

2 level tsp raw honey 

6 basil leaves 

6 mint leaves 

1 grind of black pepper 

Place all the ingredients in a blender and pulse to the desired consistency. Taste and add more honey or lemon juice if needed.

Chill for an hour or two and serve (in a bowl, not on a tennis court).
