Luscious Lemon Overnight Oats

This is just the yummiest, freshest, sunshiny breakfast. The lemons on the market last week were incredible, big and juicy.. so I couldn’t resist buying lots with no idea of what to make with them. So, quite a few lemon chickens, lemon dressings and lemon hummus’ later, this happened!

You can frill it up with whatever takes your fancy, the children requested stewed apple and blueberry with yogurt and cherries on top, but I think this would be great with any berries or coconut toppings. A dollop of coconut yogurt for creaminess and some nuts for crunch would be delicious..

This is the recipe for the lemony magic in the middle section!

Not only is it delicious, this breakfast is a beautiful balance of protein, complex carbohydrates and healthy fats to power you through the morning, along with vitamins and minerals to keep you healthy.

Ingredients – makes 1 adult portion 

1/2 cup of porridge oats 

1 tablespoon chia seeds 

Zest and juice of half a lemon (this makes it quite lemony so feel free to add less or more) 

1/2 tsp vanilla extract 

1/2 tsp almond extract 

3/4 cup of milk (I used coconut but any works well) 

1 tablespoon raw honey 

Simply mix all the ingredients together in a bowl and leave overnight in the fridge before topping with your favourites and digging in!
