Avocado Pesto recipe… Pestamole!


King Basil and Queen Avocado – a match made in heaven! …

Pesto crossed with guacamole – amazing! These beautiful ingredients make the MOST delicious, creamy and nourishing pesto, so good on rye toast with a sprinkling of toasted seeds or stirred into courgetti, dolloped on roasted veg, pretty well anywhere! Its really amazing, and so much better than plain pesto, a world away from the stuff you buy in a jar!



1/2 Ripe avocado 

1/2 Juicy lemon 

Good pinch of sea salt

A generous bunch of basil (you can also use half basil, half fresh spinach)

2 tablespoons pine nuts (I toasted mine dry in a hot frying pan for 3 minutes but you can easily use untoasted ones, or other nuts such as cashew or brazil nuts).

A good glug of cold pressed rapeseed oil or extra virgin olive oil 

1/2 clove of garlic roughly chopped


All you need to do is simply blend all the ingredients together using a hand held blender or a food processor until all the ingredients are combined or smooth, depending on what kind of texture you prefer. Drizzle with a little more oil and lemon juice and store in the fridge. Honestly its SO delicious, really worth a try!

Basil is known as King of herbs or the Royal herb and it really is regal – not only does it taste divine but it is high in vitamin k (essential for blood clotting) and magnesium (for muscle and nerve health) and has excellent anti inflammatory and anti bacterial properties. It helps to combat stress and is full of anti oxidants. BOOM!
