Almond Magic Oats Breakfast

Almonds are a really great nut and this breakfast is all about almonds. Three things stand out for me on the almond front – first, they are rich in antioxidants, which protects the body against free radicals, toxins, pollution, smoking. Second, they are high in Vitamin E, which is great news for skin, hair and nails. Third, they are a good source of Magnesium, a mineral that is hard to find in large quantities, great for keeping your blood pressure low.

Oh and they are delicious in all their various forms…

This is absolutely one of my current favourite breakfasts. Its quick, easy and can be varied in loads of different ways, plus it is full of protein and fibre and will keep you going all morning.

Ingredients: 

70g porridge oats 

1 dessertspoon chia seeds

1 dessertspoon milled flaxseed

1 small handful mixed seeds

175ml unsweetened almond milk (or any other milk of choice) 

1 heaped tablespoon yogurt (I use Coyo coconut yogurt) 

1/2 tsp vanilla powder  #affiliate

1/2 tsp cinnamon 

1 small apple grated 

1 small handful goji berries/sultanas (optional) 

Toppings: any of the following, or your own favourites…

1 handful almonds 

Drizzle of honey 

1 tablespoon almond butter 

Cacao nibs 

Fruits  – kiwi/banana/berries 

Place the oats, seeds, vanilla, cinnamon and goji berries/sultanas in a bowl. Add the milk and yogurt, stir and leave to sit for 10 minutes while you grate and add the apple.

Heat a small frying pan on a medium high heat and dry toast the almonds until they start to colour. Remove from the heat to cool slightly.

Add the fruits, cacao nibs, extra yogurt and almond butter to the top of your museli. Drizzle a little honey over the almonds to glaze and then add them to the bowl.

It really is that simple – and if you want to get ahead, you can make the base mix (oats, seeds, milk, yogurt and apple) the night before.
