Superfood Ice Lollies

This has been the most fun! I was thinking of ways to get my children eating more superfoods, vitamins and minerals and this is the result. If I say so myself, it is simple but genius! Also good for adults on a warm day sitting in the garden…

I’m going to give you 3 top recipes for these but there are so many other combo’s to try – and I’ll keep adding any that are popular. I’ve also got some rather more exotic adults ice lollies ideas to try out so keep an eye on the blog!

We did have some really old plastic ice lolly moulds (that were my husband’s as a child – yes seriously) and kept snapping so I found these brilliant silicone moulds that have transformed the whole operation! #affiliate

Pineapple, Mango & Maca Lollies 

Maca is derived from a plant in the Andes of Peru and is claimed to be a powerful antioxidant. It is used to boost energy and the immune system. Its actually got quite a pleasant caramel kind of taste, but here you can’t taste it at all.

Ingredients: makes around 3 – 4 lollies

1/4 ripe & juicy pineapple, peeled and core removed

1 ‘cheek’ of a mango, skinned

Juice of 2 small oranges or 1 large orange and 1 large carrot if you have a juicer. 

1 heaped teaspoon Maca powder #affiliate

If you have a juicer, juice the orange and carrot and place in a blender with the other ingredients. Blend until smooth and pour into the moulds. Freeze for at least 3 hours.

The next recipe is my personal favourite and also my daughter’s and it is the best colour!

Blueberry, Beetroot and Acai Lollies

I’m a huge fan of Acai, a small purple berry that grows in the Brazilian Amazon. They are little mines of nutrients and minerals. Great for immune support, a rich source of antioxidants, high in Vitamin E, Iron, Magnesium and Potassium. Like Maca, it has quite a pleasant taste though in these lollies you cant really taste it at all. For this you will need a juicer as beetroot is a tricky one otherwise – or you can use a ready squeezed beetroot & apple or orange juice, available everywhere! If you are using a juicer, be sure to peel the beetroot otherwise it has a very earthy taste.

Ingredients: Makes arout 4 lollies 

1 small beetroot – peeled & juiced

Juice of 1 large orange 

1 large handful of blueberries 

1 small handful of blackberries 

1 tsp Acai Powder #affiliate

Blend the ingredients and the juices until smooth, pour into the moulds and freeze

beetroot orange juice

This amazing coloured juice is simply the orange and beetroot. On its own is rather magnificent!

Probiotic Raspberry & Apple Lollies 

This one is really simple and deliciously creamy. Fortunately it seems that frozen probiotic bacteria is not wiped out by the freezing process and can thaw in the body – impressive! 

Ingredients: Makes around 2 lollies 

Juice of 1 apple or ready prepared apple juice 

1 large handful of raspberries

1 tablespoon of coyo coconut yogurt or natural probiotic yogurt. 

1 tsp honey (optional) 

Juice the apple and blend with the other ingredients. If you don’t like the raspberry pips, they can be sieved out before freezing.
